8 Carrots
1 Red Onion
2 large bunches of Lacinato Kale
1 tablespoon olive oil
1 1/2 cups Farro
1 1/2 cups water or vegetable broth
1/4 cup olive oil
1/8 cup tablespoon balsamic vinegar
1/2 teaspoon raw honey
salt to taste
Chop vegetables
Equal parts Farro and liquid (water, broth) set 2 minutes on high pressure in instapot
Pre-heat oven to 400. Lightly coat vegetables with olive oil and arrange on baking sheet. Roast for 30 minutes or until vegetables carmelize.
Steam Kale (2 minutes) or saute in sauce pan with tablespoon of olive oil until just wilted
