ROASTED VEGETABLES, STEAMED KALE & FARRO

Ingredients

8 Carrots

1 Red Onion

2 large bunches of Lacinato Kale

1 tablespoon olive oil


1 1/2 cups Farro

1 1/2 cups water or vegetable broth


1/4 cup olive oil

1/8 cup tablespoon balsamic vinegar

1/2 teaspoon raw honey

salt to taste

Chop vegetables

2. Cook Farro

Equal parts Farro  and liquid (water, broth) set 2 minutes on high pressure in instapot

3. Roast Vegetables

Pre-heat oven 400. Lightly coat vegetables with olive oil.  Roast until vegetables caramlize.

Pre-heat oven to 400.  Lightly coat vegetables with olive oil and arrange on baking sheet.  Roast for 30 minutes or until vegetables carmelize.

4. Steam Kale

Steam Kale (2 minutes) or saute in sauce pan with tablespoon of  olive oil until just wilted

5. Assemble

6. Dinner Time !!
